Baked rice pudding

Ingredients

100g long grain white ce

500ml milk

200ml light cream

1 tsp vanilla extract

2 tsp orange zest

½ tsp cinnamon

30g butter

40g sugar

Directions

1 Preheat the oven to 180°C/160°C fan/ gas mark 4.

2 Bring a large pot of water to the boil and cook the rice for five minutes. Drain, rinse under running water and set aside to drain well.

3 In a saucepan, combine the milk, cream, vanilla, orange zest and cinnamon.

4 Bring to a boil, then remove from the heat and stir in the butter and sugar. Allow to cooI for 15 minutes.

5 Add the rice to the milk mixture , then transfer to a baking dish. Cover with tin foil and bake for 1 hour 15 ninutes, stirring halfway through. Serve warm.
