Best Ever Rhubarb Pecan Muffins

Ingredients

2 c all purpose flour

3/4 c granulated sugar

1 1/2 tsp baking powder

1/2 tsp baking soda

1 tsp salt

3/4 cup chopped pecans

1 egg

1/4 c vegetable oil

2 tsp grated orange zest

3/4 c orange juice

1 1/4 c finally chopped fresh rhubarb

Directions

Preheat oven to 350. 12 cup muffin tin, lightly greased.

In a bowl, combine flour, sugar, baking powder, baking soda, salt and pecans.

In another bowl, beet egg. Add oil, orange zest, and orange juice. Add to flour mixture, stir, moist, and blended. Add rhubarb.

Spoon batter into prepared muffin tins, filling to top. Bake in preheated oven for 25 to 30 minutes.
