Marry Me Chicken & Rice

Ingredients

2 ½ lbs Chicken Breast, Raw & Skinless (1134g)

2 ½ Cups Jasmine Rice, Dry (500g)

1 Cup Chicken Broth (240mL)

4 tsp Minced Garlic (20g)

1 Small Onion, Diced

1 Cup Sun-Dried Tomatoes, Chopped (125g)

2 Cups Baby Spinach (60g)

2 Cups Grated Parmesan Cheese (200g)

1 ½ Tbsp Italian Seasoning

1 Tbsp Paprika

1 Tbsp Garlic Powder

1 tsp Chili Flakes

Salt & Black Pepper

Sauce:

1 Cup 2% Cottage Cheese (200g)

1 Cup 0% Greek Yogurt (240g)

2–4 Tbsp Chicken Broth (taken from the crockpot)

1 tsp Onion Powder

1 tsp Garlic Powder

1 tsp Chili Flakes

Directions

1.) Add chicken, broth, and seasonings to crockpot; cook on high 3–4 hrs or low 6–8 hrs.

2.) Cook rice and set aside.

3.) Blend sauce ingredients with a little broth until smooth.

4.) Shred chicken, then stir in sauce, parmesan, and spinach; cook 5–10 minutes until thickened.

5.) Divide into 8 servings with rice and store or serve.
