Tofu Sushi Bowls

Ingredients

Shredded Tofu Sushi Bowls Recipe

Takes 35 minutes (not including rice cooking time)

For the tofu:

300g extra firm tofu, grated

1 ½ tsp smoked paprika

1 ½ tsp cumin

1 small shallot, finely chopped

4 garlic cloves, grated

2cm piece of ginger, grated

1 ½ tbsp sweet white miso paste

For the slaw:

1 ripe avocado, flesh cut into small cubes

1 large handful of diced fresh cucumber

1 spring onion, white parts finely chopped

2 tbsp fresh coriander or parsley

1 tbsp sesame seeds

Juice of one lime

½ tsp sea salt + more to taste

For the rest of the bowl:

180g cooked sushi rice

2 large handfuls of edamame beans, thawed if frozen

Pickled ginger

Sriracha mayo

Sesame seeds (for garnish)
