Turkey Marinara Spaghetti Squash

1 medium spaghetti squash
2 tbsp olive oil
Salt, to taste
Pepper, to taste
1 lb lean ground turkey
1 medium onion, finely chopped
3 cloves garlic, minced
2 cups marinara sauce
Fresh basil leaves, for garnish
Directions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Cut the spaghetti squash in half lengthwise and remove the seeds. Drizzle olive oil inside each half and season with salt and pepper.
Place the squash cut side down on the baking sheet and roast for about 30-35 minutes until tender.
While the squash roasts, heat 1 tablespoon of olive oil in a large skillet over medium heat.
Add chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook until fragrant.
Increase heat slightly, add ground turkey, and cook until browned, breaking it into small pieces as it cooks.
Pour marinara sauce over the turkey mixture and stir well. Let it simmer on low heat until the squash is done.
Once the spaghetti squash is tender, scrape out its strands with a fork and place them on plates. Spoon the turkey marinara mixture generously over each serving.
