Pasta Salad

Ingredients

Pasta

⁃8-12 oz. box of farfalle pasta - wet with EVOO and dash of salt/pepper

⁃1 cup grape tomatoes - halved

⁃1 cup bell peppers - diced

⁃1 cup red onion - diced

⁃1 cup english cucumber - quartered and sliced

⁃1 can chick peas - drained and rinsed

⁃1/2 cup cilantro - chopped

⁃1 cup salami - cubed small

⁃1/2 cup parmesan - cubed

⁃1/2 cup asiago - cubed

⁃1/2 cup shredded parmesan

Dressing

⁃1/4 - 1/2 cup EVOO

⁃3-6 tbsp red wine vinegar

⁃4 cloves of garlic - minced

⁃3 tsp oregano

⁃1/2 tsp salt

⁃1/2 tspblack pepper

Directions

  1. cook noodles to al dente

  2. toss noodles in EVOO and salt/pepper

  3. Add remaining ingredients and drizzle with homemade dressing or store bought italian dressing

  4. let sit in fridge for at minimum 2 hours
