Spiced Prawns with Tomatoes

Ingredients

225g Frozen Prawns

450g Tomatoes, peeled and chopped

22ml Neutral Oil

1 large Onion, halved and sliced

2 cloves Garlic, crushed

1.5g Coriander Seeds

2.5g Cumin Seeds

1 Cardamom Pod

5g Ginger, ground or grated

5g Turmeric

2.5g Chilli Powder

Salt and Pepper, to taste

Directions

In a large frying pan, heat the oil then add the onion slices, frying them gently for about 10 minutes, or until softened and golden.

At the same time, place the whole spices in a dry pan and roast them over a gentle heat for about 5 minutes until aromatic, then crush them.

Add all the spices, along with garlic, to the onions and stir until everything is well-heated. Then add the prawns and stir them around until evenly coated.

Add prepared tomatoes and some salt and pepper. Bring to a simmer and cook for about 20-25 minutes, uncovered, until the liquid had mostly evaporated and the tomatoes have reduced to a sauce consistency.

Serve with pilau or brown rice.
