Meal Prep Salads That Won’t Go Soggy

Waldorf chopped salad
Anyone who thinks salads are dull and boring needs to try my blue cheese chopped salad. A perfect combination of creamy, tangy, crunchy, sweet and salty. The salad base contains fresh apple, celery, and smashed cucumber, which clings to all the gorgeous dressing. The dressing you make in the base of the salad bowl, crumbling in blue cheese with honey, yoghurt, mustard and lemon. Toss everything together with toasted walnuts, add in your protein and serve.
You will need to serve 2 (will hold for 2-3 days)

1 green apple, finely sliced
1/2 cucumber
2 sticks celery, finely diced
1/2 red onion, finely sliced
30g walnut halves
60g blue cheese
1 lemon
1 heaped tsp whole grain mustard
1 heaped tbsp yoghurt
1 tsp honey
200-250g cooked protein. I used shredded roast chicken (not included in macros)
Using a rolling pin, cut the cucumber in 1/2 and bash it, then cut it into segments.
Crush the walnuts and toast in a dry frying pan over medium heat until smelling aromatic, but don’t burn.
Crumble the blue cheese in a large bowl. Add the mustard, honey, yoghurt, and the juice of 1 lemon—season with salt and pepper.
Toss the celery, cucumber, red onion, apple, and walnuts into the dressing until well coated. Season to taste with extra lemon, salt, and pepper if necessary.
