Strawberry Matcha Cookies

Cookies:
1 cup unsalted butter
1 cup sugar
1 tsp kosher salt
1 tsp baking powder
1 egg
¼ tsp almond extract
2½ cups all-purpose flour
2 tbsp matcha
Extra flour for dusting
Buttercream:
½ cup unsalted butter
1 cup powdered sugar
¼ cup freeze-dried strawberries
1 tbsp + heavy cream

Instructions
(Preheat oven to 350°F)
Cookies:
1. Cream room-temp butter with sugar, salt, and baking powder.
2. Add egg and almond extract and beat until homogenous and fluffy.
3. Add both flours and matcha, mix until matcha is evenly dispersed and forms a cohesive dough.
4. Dust a clean, floured surface with flour. Roll out dough, keeping it about ¼-½ inch thick.
5. Use a 3" cookie cutter to cut out shapes.
6. Place cookies on lined sheet. Bake 12 minutes. Let cool before icing.
Buttercream:
1. Blend dried strawberries into a powder.
2. Cream room-temp butter with powdered sugar and strawberry powder.
3. Add tbsp heavy cream. Beat frosting until light, fluffy, and pale pink.
4. Pipe onto, or spread on cookie as desired.
