I tested this recipe a bunch of ways:

With Greek yogurt: this worked and tasted the same, but cottage cheese has more protein!

Gluten-free flour: Add 2 tsp of baking powder and a pinch of salt. They didn’t puff up quite as much, as expected, but they were still soft and delish.

Whole wheat or regular flour: use the same amount of baking powder and salt. This worked great!

Air fryer: this takes half the time and was just as puffy and golden. Highly recommend!
