Chilli Peanut Noodles

Ingredients

250g knife cut noodles

2 tbsp peanut butter

1 tsp gochujang

⅓ cup each: chopped green onions, basil, cilantro

1 tbsp sesame seeds

1 tbsp chili flakes

1 tsp grated ginger

1 garlic clove, minced

2 tbsp soy sauce

1 tbsp rice vinegar

½ lime, juiced

2 tbsp avocado oil

Chili oil for garnish

Directions

On a plate, combine peanut butter, gochujang, herbs, sesame seeds, chili flakes, ginger, garlic, soy sauce, vinegar, and lime juice.

Cook noodles; reserve ¼ cup cooking water.

Heat oil until hot; pour over plate ingredients and mix into a sauce.

Toss noodles with sauce and reserved water.

Garnish with onions, sesame seeds, and chili oil.
