Peanut butter Cookies Gluten Free

Ingredients

1 cup (250 g) peanut butter, creamy or chunky

1 cup (200 g) sugar

1 large egg, lightly beaten at room temperature

1 teaspoon baking soda

Directions

Preheat oven to 350 and line baking sheet with parchment paper.

In mixer, fitted with a paddle attachment, beat together peanut butter and sugar until well combined.

Add beaten egg and baking soda until well combined.

Roll small scoop of dough into balls. Roll in sugar and place 1” apart on baking sheet. With the back of a fork, press balls down making a cross-hatch pattern.

Bake in oven until puffy and golden, about 10 minutes.

Cool cookies on baking sheet 2 minutes and then transfer to rack to cool completely.

Notes

A regular peanut butter recipe cooks the balls and flattens them slightly with smooth end of a glass after baking immediately vs using a fork before. Could this work?
