High Protein Cauliflower & Tofu Bowl

1 small head of cauliflower, cut into small florets

300g firm tofu, diced into small cubes

15ml low sodium soy sauce

20ml maple syrup

10ml extra virgin olive oil

10ml sriracha sauce

1 tbsp sesame seeds

1/2 tsp garlic powder

1 ripe avocado, sliced

1 small cucumber, sliced

2 spring onion stalks, sliced

2 cups steamed rice

Directions

Preheat oven to 200C and line a baking tray with baking paper.

Mix the soy sauce, maple, sesame, garlic and oil in a jar. Add the cauliflower and tofu to a large bowl and pour oven the sauce. Toss it with clean hands to coat well.

Place on the baking tray and bake for 30 minutes, until lightly golden.

Serve it with rice, cucumber, avocado and spring onion.
