Ingredients

3 egg whites

¼ tsp cream of tartar (1 g)

⅔ cup sugar (135 g)

¼ cup water (60 mL)

¾ cup honey (255 g)

1 tsp vanilla extract (5 mL)

Directions

Beat egg whites and cream of tartar until soft peaks form (5 min).

Boil sugar, water, and honey until it reaches 246°F (119°C).

Slowly drizzle hot syrup into egg whites while mixing on low.

Add vanilla, then beat on high until fluffy (10 min).

Store in a sealed container at room temp for up to 1 week.
