Carrot Cake Pancakes

Ingredients

1 apple (sliced with core removed)

1 carrot (raw shredded or steamed in chunks)

1 egg

1/2 cup rolled oats or oat flour?

1/2 tsp baking powder

1/2 tsp cinnamon

pinch of salt

1/3 cup milk

2/3 cup flour

Directions

1. Put all ingredients except for a flour into a blender and blend until smooth

2. add flour to blender and gently pulse until mixed

3. heat a pan with a small amount of butter on medium low heat.

4. poor poor small amounts of batter directly from the blender onto the heated pan and cook until small bubbles pop on the surface. flip over and cook other side.

5. serve and enjoy. great with maple syrup.

Notes

store leftovers in an airtight container in the fridge for up to 3 days

freeze for up to 4 months

Don't try with chocolate chips, yucky
