100 g mayo

50 g plain Greek yogurt

10 g white vinegar

Juice from 1/4 lemon

10 cranks black pepper

Sprinkle of oregano

Sprinkle of smoked paprika

Salt to taste

15 g ground cayenne pepper

5 g red pepper flake

3 g salt

10 g Sugar

50 g white vinegar

Juice from 1 lemon

100 g water


White Sauce - Mix

Place bowl over a scale, add mayo, yogurt, vinegar, lemon juice, black pepper, oregano, smoked paprika and salt into a bowl. Mix together.

White Sauce - Adjust

Taste it! Adjust salt or any spice / herb additions as you see fit.

Red Sauce - Blend

Add all ingredients to a blender. Process until smooth.

Red Sauce - Simmer

Add sauce to a pot and simmer over medium-low heat to develop flavors and reduce the sauce.

Red Sauce - Adjust

Taste and adjust for salt and vinegar - NOTE: This will be hot.

Red Sauce - Store

Let cool before storing in a bottle in the fridge.
