Ingredients

onions, garlic, ginger

spices: curry, coriander, cumin, garam masala, chili, salt & pepper

1/2 a large butternut squash

65g dates

1 can of diced tomatoes

120g lentils

soy yogurt to top

squeeze of lemon juice

served and eaten with a crusty Brötchen from your local Bäckerei baybeeeee

Directions

- caramelize onions lovingly for like 15 minutes at least

- ⁠add garlic and ginger, fry that for like 1 minute

- ⁠add spices — sautée for 30 seconds, making sure not to burn

- ⁠add can of tomatoes; cook that until the oil separates from the tomatoes

- ⁠add lentils, dates, etc; simmer for like 3 minutes

- ⁠separately, roast the butternut squash whole in the oven (I cannot remember the exact time and temp unfortunately); when it’s done, throw it in there, and mash it up so it becomes One with the Stew
