Directions

  1. Pat steak dry

  2. Put freshly ground pepper, kosher salt, and garlic powder on steak 40 minutes before at room temp OR overnight in the refrigerator. If wet after, pat dry again before cooking

  3. Preheat oven to 250-275°F. Reverse sear to 120°F.

  4. Let rest on counter for 30 minutes

  5. On a 500°F stove setting and in a preheated cast iron, add refined avocado oil and sear each side flipping every 30 seconds for two minutes or until desired doneness.

  6. No resting required

  7. In a same pan add 1 TBSP of ghee/butter, some thyme, and 1-2 crushed cloves of garlic. Sauté them over medium to medium-high heat for two minutes or until the butter becomes brown. Cut the steak into slices and add the concoction on top.

Optionally: allow the steak to rest and add 1 TBSP of butter on top. Place aluminum foil on top. The residual heat will melt the butter.

Notes

Alternatively, add aromatics with the steak as soon as start to sear. If doing this, drop the heat by 15%.
