Rhubarb Crunch

Ingredients

FRUIT FILLING

3 c. diced rhubarb

1 c. sugar

3 Tbsp. flour

TOPPING

1 c. brown sugar

1 c. rolled oats

1 c. flour

1 c. Margarine, or 1/2 c butter and 1/2 c other shortening

Directions

Mix fruit, sugar, and flour.

Place in a 6x10 baking dish.

In another bowl, mix brown sugar, oats, and flour. Cut in margerine/butter. Sprinkle over rhubarb mixture.

Bake at 375 degrees for 40 minutes. With cream or ice cream.

Notes

Hint: use 1/4 - 1/2 t. of baking soda in the filling of a fruit pie or crumble and about half the usual amount of Sugar. I haven't tried this yet, but it might come in handy if I'm short of sugar. -Lannie
