Mediterranean-style Pickled Cucumber, Onion & Bell Pepper Sa

2 medium English cucumbers, thinly sliced
1 small red onion, thinly sliced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
For the pickling dressing
1/2 cup white vinegar or apple cider vinegar
1/4 cup water
2 tablespoons extra virgin olive oil
1 tablespoon honey (or maple syrup)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon turmeric (optional)
1/2 teaspoon grated fresh ginger or 1/4 teaspoon ground ginger (optional)
1 tablespoon fresh dill, chopped (optional)
Directions
Slice the cucumbers, onion, and bell peppers very thin and place them in a large mixing bowl.
In a separate bowl, whisk together the vinegar, water, olive oil, honey, salt, pepper, turmeric, and ginger until well combined.
Pour the dressing over the vegetables and toss thoroughly so everything is evenly coated.
Cover the bowl and refrigerate for at least 30 minutes to allow the vegetables to lightly pickle and absorb the flavors.
Before serving, toss again and sprinkle with fresh dill if desired.
Serving suggestions
Serve chilled as a refreshing side with grilled chicken, seafood, kebabs, BBQ, or Mediterranean rice dishes.
Storage
Store in an airtight container in the refrigerator for up to 3 days. The flavor becomes even better as it marinates.
