Thai-inspired Peanut Pasta Salad

I’m always looking for tasty ways to add more veggies to my diet and this colorful pasta salad is just as fun to look at as it is to eat 😋 It’s perfect for meal prep too, because none of the ingredients will get soggy in the fridge!

Notes:

I used wheat noodles for this recipe, but you can also use rice noodles; they just break up a little more after mixing

Gluten-Free: use gf noodles and gf tamari to make this recipe gluten-free!

THAI-INSPIRED PEANUT PASTA SALAD

For the Pasta Salad:

8 ounces dry spaghetti or rice noodles*

16 ounces shelled edamame or mukimame

3 cups shredded red cabbage

2 carrots

1 bell pepper

3 green onions

1/2 small bunch cilantro

1/2 cup roasted peanuts

For the Dressing:

1/2 cup natural creamy peanut butter

3 tablespoons lime juice

2 tablespoons soy sauce or tamari

2 teaspoons toasted sesame oil

2 cloves garlic

1/2 tablespoon ginger

1 teaspoon sugar

1/4 cup warm water
