Ingredients

Baked Spicy Chicken and Dumplings

100g red curry paste

1 tbsp lime juice

500ml Chicken stock

270ml coconut milk

300g shredded cooked chicken

2 bunch Pak choy, chopped

16 dumplings

Optional garnish – Spring onion, black sesame seeds

Directions

Preheat oven to 200°C.

In a large baking dish, combine curry paste, lime juice, chicken stock, and coconut milk. Mix well.

Add shredded chicken and chopped pak choy. Stir to combine.

Arrange dumplings on top, semi-submerging them in the curry liquid..

Cover with and bake for 20-25 minutes, or until liquid is bubbling and dumplings are soft and warmed through.

Serve hot and enjoy!
