Pork and Peach Skewers

3 Tbsp apple cider vinegar
2 Tbsp olive oil
½ cup hoisin sauce
¼ tsp red pepper flakes
1 Tbsp grated ginger root
1 Ib pork tenderloin
2 firm ripe peaches, peeled and cut into 1½-inch cubes
Directions
1. In a medium bowl, combine vinegar, olive oil, hoisin, pepper flakes and ginger and mix. Cut tenderloin into 1-inch cubes and add to the vinegar mixture. Cover and refrigerate at least 4 hours, up to 24 hours.
2. When nearly ready to serve, preheat air fryer to 380 degrees F. Alternate pork cubes and peaches on 6-inch. metal skewers; discard marinade. Air fry in a single layer for 7 to 11 minutes, turning once during cooking time, until pork is cooked to 150 degrees F and the peaches are tender.
