Parmesan Roasted Chickpeas

Ingredients

15 oz can of Chickpeas, drained and rinse

2 tbsp of grated Parmesan Cheese

2 Garlic Cloves, minced (you can also use 1 tsp of garlic powder)

1 tbsp of Olive Oil

1 tsp of Italian Seasoning

Directions

Preheat oven to 400F.

Carefully dry the chickpeas with a paper towel (the drier they are, the better). I also recommend removing the skins, but this step is optional.

In a medium bowl, add the dried chickpeas, olive oil, garlic, Italian seasoning and grated parmesan. Mix well to coat evenly.

Spread the seasoned chickpeas out on a parchment paper-lined baking sheet.

Roast for 15-20 minutes, mix them around, then roast for an additional 15-20 minutes (or until golden)

Let it cool for 5-10 minutes and enjoy!

Recommendations: Be creative with the seasoning in this recipe. There are a lot of different flavor combinations you can do! If you are allergic to dairy, skip the cheese and add a little salt.
