Portuguese Style Roasted Potatoes

Ingredients

2 pounds potatoes (preferably waxy varieties like Yukon Gold or red potatoes), peeled and cut into chunks

1 large onion, peeled and cut into chunks

4 cloves garlic, minced

2 bay leaves

2 teaspoons sweet paprika

1/4 cup olive oil

Salt and pepper to taste

Chopped fresh parsley for garnish (optional)

Directions

1. Preheat your oven to 400°F (200°C).

2. In a large bowl, combine the potatoes, onion chunks, minced garlic, bay leaves, sweet paprika, olive oil, salt, and pepper. Toss everything together until the potatoes and onions are evenly coated with the seasoning mixture.

3. Transfer the seasoned potatoes and onions to a baking dish or a baking sheet lined with parchment paper, spreading them out in a single layer.

4. Roast the potatoes and onions in the preheated oven for about 30-35 minutes, or until they are golden brown and crispy on the outside, and fork-tender on the inside. Stir or flip the potatoes and onions halfway through the cooking time to ensure even browning.

5. Once the potatoes and onions are cooked through, remove them from the oven and discard the bay leaves.

6. Serve the roasted potatoes and onions hot, garnished with chopped fresh parsley if desired.
