Pizza Dough

2 1/2 cups “tipo00” flour
1 Tbsp instant dry yeast
1/4 tsp salt
1/4 tsp sugar
1 cup warm water
1 Tbsp olive oil
Directions
Heat water to 105-110F, mix sugar into water.
Sprinkle yeast on top and stir gently. Wait 5-10 minutes then pour into mixing bowl in stand mixer.
Add flour, salt, and olive oil.
Knead in stand mixer for 6-8 minutes until you have a moderately stiff dough that is smooth and elastic (add a bit more flour if you need to).
Cover and let rest for minimum 30 minutes but up to a few hours works better.
When ready to bake, spread cornmeal on surface and roll out dough to desired shape & thickness. Preheat oven to 500 or 550F convection bake. Cook to desired doneness.
