Kick Ass Crepes

Ingredients

1/2 cup oat flour

1/2 cup 2% milk or water

2 eggs

1/2 tsp cinnamon

1/4 tsp vanilla

pinch of salt

optional add-ins / toppings:

Greek yogurt mixed with protein powder

blueberries

bananas

maple syrup or honey

Directions

Blend all ingredients in a blender until smooth.

Place the batter in the fridge for 30 minutes (this helps hydrate the oats and creates a smoother, more flexible crepe).

Heat a pan over medium heat with a little coconut oil.

Pour a thin layer of batter into the pan and spread evenly.

Cook for 1–2 minutes, then flip and cook the other side until golden. Makes about 2 crepes.

Add in whatever you like, roll them up, and top with maple syrup or honey.
