Chimichurri Salmon

Salmon

Olive oil

Lemon juice

CHIMICHURRI

1 bunch parsley

4 cloves garlic

1 fresno chili (or chili flakes)

1 shallot or 1/4 red onion

1/2 cup olive oil

2 tbsp red wine vinegar

S+P

Directions

FISH

Cover salmon with olive oil, salt and pepper on both sides. Add lemon juice. Bake at 400° for 20 minutes, broil near the end.

CHIMICHURRI

Chop and combine all ingredients. Add to salmon once ready.

Notes

Serve with rice and Herbed Roasted Potatoes
