Fried Caprice Des Dieux (or Brie) for My "just a Bite" Serie

Ingredients

1 caprice de dieux or brie wheel.

1/2 cup panko.

1 cup plain breadcrumbs.

3 tbsp flour.

Kosher salt to taste.

1 extra large egg.

1 tbsp heavy cream.

Flaky salt.

1 lb small peewee potatoes.

2 tsp smoked paprika.

1 ½ tsp herbs de provence.

1 tsp chipotle powder.

1 tsp garlic powder.

Chives for topping.

3 tbsp olive oil plus more for frying.

Directions

Drizzle the potatoes with olive oil, paprika, pinch of kosher salt, chipotle, garlic and herbs de provence.

Roast at 400F for 20-25 min.

Add a bit of salt to the flour.

Combine the panko and breadcrumbs.

Pass the cheese through the flour, then egg, then breadcrumbs/panko. Do egg and breadcrumbs/panko again.

Place in the fridge for 15 min.

Preheat about 1.5 inches of olive oil until it reaches 350F and fry the cheese until deeply golden on both sides.

Hit it with flaky salt.

Serve with the potatoes.
