Creamy Mushroom Chicken

4 8-oz Boneless skinless chicken breasts

2 tsp Sea salt

1/2 tsp Black pepper

1 tbsp Olive oil

1 cup Cremini mushrooms ((sliced))

1/2 cup Cooked bacon ((chopped; optional))

2 cloves Garlic ((peeled and crushed))

3 sprigs Fresh thyme

1 tsp Cajun seasoning ((optional))

1 cup Heavy cream

1 tbsp Grated parmesan cheese ((plus more for garnish if desired))


Pat the chicken dry with paper towels. Season with salt and pepper.

Heat the oil in a large skillet over medium-high heat. Sear the chicken, about 4-8 minutes per side, until browned and cooked through. Transfer to a plate and cover to keep warm.

Add the mushrooms, bacon (if using), garlic, thyme, and Cajun seasoning (if using) to the same skillet. Cook for 3-5 minutes, until the mushrooms are browned.

Stir in heavy cream. Bring to a simmer.

Stir in the parmesan cheese, until the sauce is smooth.

Return the chicken to the skillet and cover with sauce. Cook for 1 minute to reheat the chicken, if needed.

If desired, garnish with more parmesan.
