Czech Hot Rolls

Yields: About 3 dozen rolls
Ingredients:
– 3/4 cup warm water
– 2 packages (or 2 tablespoons) dry yeast
– 1 1/4 teaspoons sugar
– 1 cup warm milk
– 1 egg
– 1/2 cup sugar
– 2 teaspoons salt
– 3 tablespoons butter
– 5 1/4 cups flour
Directions
1. Activate Yeast:
Dissolve 1 1/4 teaspoons sugar and yeast in 3/4 cup warm water. Set aside.
2. Prepare Dough:
In a large mixing bowl, combine egg, 1/2 cup sugar, salt, butter, and warm milk. Mix well.
Add 3 1/2 cups flour to the bowl and mix thoroughly.
3. Combine Yeast Mixture:
Cool the flour mixture to lukewarm, then add the yeast mixture.
Gradually add the remaining flour until all ingredients are well blended.
4. Knead Dough:
Knead the dough for 10 minutes.
5. First Rise:
Place dough in a greased bowl, cover with a damp cloth, and let rise until doubled in size.
6. Shape Rolls:
Cut dough into pieces using about 1 tablespoon per roll. Shape as desired and place on a well-greased cookie sheet.
7. Second Rise:
Brush tops of rolls with butter. Cover and let rise until doubled in size.
8. Bake:
Preheat oven to 375°F. Bake rolls for 15–20 minutes, or until golden brown.
