Slow Cooker Beef Massaman

Ingredients

This is my melt in your mouth Slow Cooker Beef Massaman curry, so flavourful and so easy to make truly a must try. Let’s go:

Ingredients: Serves 5 (514 calories and 46.4g protein per serving)

1 large onion

1 tbsp minced garlic

450g potatoes chopped

1 red or green chilli

4 dried or fresh lime leaves

3 cardamon pods

1 tbsp fish sauce

1 tbsp brown sugar

750g diced brown beef

1 tbsp olive oil

1 tbsp cornflour

100ml beef stock

400ml full fat coconut milk

Juice half a lime

3-4 tbsp massaman paste

Directions

Add 1 tbsp olive oil to a pan and brown off the beef in the pan for 5 minutes with 1 tbsp cornflour.

Add the browned off beef to the slow cooker along with the rest of the ingredients, season well then cook for 4 hours on a high or 8 hours on a low.

Serve with fresh coriander, fresh chilli and white rice, enjoy and tuck in.
