Small red potatoes, skin on
Butter
Shredded Parmesan cheese

Directions
Preheat oven to 425°. Boil potatoes until fork tender. Place on parchment lined cookie sheet. Smash with bottom of glass or potato masher. Put a blob of butter on top and springer with Parmesan. Bake for 25 minutes. Serve with dipping sauce.
