Lime Chicken Fajitas

Ingredients

Marinade:

1/3 cup lime juice from 2 - 3 limes

6 Tbsp Olive Oil

3 cloves of garlic (minced)

1 1/2 tsp brown sugar

1 jalapeno, seeds and ribs removed, minced

1 1/2 Tbsp minced fresh cilantro

1 tsp salt

3/4 tsp pepper

4 boneless, skinless chicken breasts

Directions

Put chicken in gallon ziplock and pour on marinade reserving 1/4 cup marinade in a small bowl; set aside and pour over cooked chicken

Grill or bake chicken.  On the grill: Approximately 6 to 8 minutes per side over direct heat, 10 to 12 minutes per side over indirect heat.

In the oven: Approximately 20 to 30 minutes when baking or roasting at 375 degrees F.

160 F with a meat thermometer let rest 5 minutes to raise temp to 165 F

Serve with:  grilled onions, tortillas, salsa, sour cream, guacamole, grated cheese, black olives, rice, black beans and shoepegcorn, lime and cilantro.
