Simple Tuscan Chicken

2 can chicken chunks
1 can diced tomatoes
1 bag spinach
1 pint heavy whipping cream
8-12 oz Parmesan cheese (shreaded or crumble)
1/2 tbsp Onion powder
1/2 tbsp Garlic powder
1/4 tbsp butter
1/4 cup water
1/4 tsp Salt and pepper (more to taste)
Starch (noodles/bread/rice/potatoes)
Directions
Prep:
Wash spinach
Drain can chicken
Steps:
Heat pot with butter on med-hi till melted
Add tomatoes, spinach, water, garlic powder, onion powder and stir
Cover, stir occasionally, until spinach is completely wilted
Add heavy cream and cheese while stirring continuously
Add chicken and stir
Cover and simmer till sauce darkens to more yellow/orange in color (approx. 20 min) stirring occasionally
Serve over any starch and sprinkle any leftover cheese on top
Notes
Serve on top of any starch: noodles, rice, potatoes, bread
Can substitute cheese (softer like mozzarella for gooey, sticky sauce and hard cheese like parmesan or romano for creamy)
Can substitute canned tomatoes for small cherry or grape tomatoes sliced in half
Can substitute cream of chicken soup for the heavy cream
adjust post-heavy-cream thickness with milk
Swap out the water for water + bullion or chicken broth/stock for a richer flavor
Use half a large yellow onion instead of onion powder for more substance. Also swap garlic powder for fresh garlic for more flavor.
Always add in the garlic and onion at the same time, the spinach and tomatoes at the same time, and the heavy cream and the cheese at the same time
If using onions and garlic, carmelize onions before adding the spinach and tomatoes
Add the cheese right after pouring in the heavy cream. If the heavy cream has started cooking, the cheese may be harder to get incorporated and is at risk of settling and burning at the hottom during the simmer phase
If the vegetables are cooking too fast, add a 1/4 -1/2 cup of water, stir, and allow the water to evaporate
