It is THE BEST #noflour cake ever. I make it all the time even when it’s not Pesach. It’s actually Tunie B’s favorite dessert.
There are so many ways to serve this dessert. You can make multiple layers, serve just the chocolate mousse in cups with the whip, make trifle bowls with the cake instead of layered like I show. The possibilities are endless. Many times I make a white sponge cake (KFP) and layer that for a black and white fancy cake presentation.
You can use dark chocolate, rosemary chocolate - your favorite kind. Just adjust the sugar accordingly.
I normally use the white package of the Knoble brand semi sweet chocolate.
You can use chocolate chips - but weigh them for the 7 oz. The bars are 3 1/2 oz so easier.
It all works and you NEVER MISS that there is NO FLOUR!
RECIPE:
7 oz chocolate, melted with 3 oz margarine or neutral oil
7 eggs, separated
1/2 cup sugar
4-5oz non dairy whip
Directions
Melt chocolate with margarine. Mix till smooth.
Set aside.
Whip the whites till stiff
Add the chocolate to the egg yolks with the sugar and mix till smooth.
Gently FOLD the chocolate mixture into the whites - you want to try to keep it as airy as possible.
Then take half the batter and place into a round baking pan that has been lined with paper and sprayed.
Take the other half of the mousse and put into a container and store in the freezer for up to an hour or just place in fridge till ready to use.
Bake on 350F for 20-25 minutes. Until the chocolate cake has just been set. You don’t want a jiggle in the middle but you also don’t want to over bake it.
Whip your non dairy whip topping till stiff peaks.
Then when cake is cooled. Layer first the chocolate mousse from fridge ontop. Then add the whip. Garnish with shaved chocolate.
Serve immediately
Or place in a large tin and seal tightly and can be frozen or refrigerated till served.
Can be served frozen also - it’s really delicious that alway too!
