Sweet & Spicy Korean Beef Noodles

2lbs 96% beef
3 tablespoons gochujang
3 tablesooons soy sauce
2 tablespoons sugar free ketchup
1 tablespoon garlic powder
1 tablespoon rice wine vinegar
Black pepper and salt to taste
Green onion whites (save greens for garnish)
Low heat, 3-4 hours
Low cal spicy mayo:
60g light mayo
40g gochujang
20g sriracha
10g yuzu ponzu
10g sesame oil
5 packets Momofuku Sweet & Spicy noodles*
or use any noodles of choice, 425g of noodles total. Add ~3 tablespoons of any store bought Korean BBQ marinade to replace sauce packets
1 cup of water
60g honey
1 tablespoon sesame oil
Pinch of salt
Cover for 10-15 minutes to finish off the noodles, separate in to 7 equal servings, and enjoy.
Store frozen for best results, microwave 3-4 minutes to reheat (add a tablespoon of water so it is saucy on the reheat)
