Fasolakia Recipe (Greek Green Beans with Potatoes)

½ cup Olive oil
1 Large onion (diced)
5 Garlic cloves (minced)
1 Small red chilli (diced (optional)
2 tbsp Tomato paste
1 Fresh parsley bunch (small) (chopped)
10 Baby potatoes (peeled and halved)
400 grams Crushed tomatoes
1 tbsp Salt
½ tsp Black pepper
500 ml Vegetable stock
500 grams Green string beans (tips and tails trimmed)
Directions
Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, then sauté for 2 minutes until fragrant.
Stir in the tomato paste, red chilli, and parsley, mixing well.
Add the potatoes, salt, pepper, and crushed tomatoes, stirring to coat everything evenly.
Pour in the vegetable stock, bring to a boil, then reduce the heat to low-medium. Cover and simmer for 10-15 minutes.
Stir in the green beans, cover again, and continue cooking for another 10 minutes.
Remove the lid and cook uncovered for a further 10 minutes until the potatoes are soft and the liquid has slightly reduced.
Turn off the heat and let the dish rest for a few minutes before serving.
