Chicken And Leek Gnocchi

300g Gnocchi
4 boneless skinless chicken breasts
1/4 Cup Olive Oil
2 Cloves of Garlic, crushed
3 Large leeks (white parts only) cleaned and sliced
1/2 tsp dried thyme leaves
Pinch of Black and Cayenne Pepper
250 ml dry white wine
1 Cup whipping cream
2 Cups Shredded fresh spinach
3/4 Cup Parmesan Cheese
1/2 tsp Salt
Directions
Cook gnocchi according to package directions.
Cut chicken into strips. Heat oil in skillet and cook chicken, leeks, and garlic until chicken is lightly browned. Stir in wine, thyme, pepper and cream.
Bring to boil and simmer for 2 minutes or until sauce is slightly thickened. Stir in spinach, Parmesan, and salt, simmer for one minute. Add pasta and serve.
