Kathleen’s One Pot French Onion Pasta

Ingredients

2 tbs olive oil and 2 tb butter to caramelize 4 sweet onions and 2 leeks

2 tbsp all purpose flour

4 cups chicken stock

2 tsp beef bouillon

12 oz Brami

1 tbsp sherry vinegar

1 tbs Worcestershire sauce

Sprinkle salt and sprinkle thyme to taste

Salt and freshly ground black pepper to taste

Fresh herbs and toasted breadcrumbs for serving (optional)

Directions

Caramelize onions.

Add flour and cook out. Then add spices and Worcestershire and sherry vinegar.

Pour in the stock and bouillon.Season with salt and thyme. Bring to a boil then add the pasta and cook for 8-10 minutes or until al dente. (Keep in mind that other pasta shapes will have different cook times).

Top with grated parmigiano and Gruyère grated. Broil.
