Ingredients

1 cup orzo pasta

2 tablespoons unsalted butter

3 cloves garlic, minced

8 ounces cremini or button mushrooms, sliced

2 cups fresh spinach leaves

2 cups vegetable or chicken broth

1/4 cup grated Parmesan cheese

Salt and black pepper, to taste

Fresh parsley, chopped (optional, for garnish)

Lemon wedges (optional, for serving)

Directions

Step 1

In a large skillet over medium heat, melt the unsalted butter. Once melted, add the minced garlic and cook for about 1 minute until fragrant.

Step 2

Add the sliced mushrooms to the skillet, cooking for 5-7 minutes or until they are tender and golden brown.

Step 3

Stir in the orzo pasta, ensuring it is well-coated with the garlic butter and mixed with the mushrooms.

Step 4

Pour in the vegetable or chicken broth, bring to a simmer, and cover the skillet. Cook the orzo for 10-12 minutes, or until the pasta is tender and has absorbed most of the broth, stirring occasionally to prevent sticking.

Step 5

Add the fresh spinach to the skillet, stirring it gently into the orzo until wilted.

Step 6

Remove the skillet from heat, and stir in the grated Parmesan cheese, seasoning with salt and black pepper to taste.

Step 7

Serve the orzo hot, garnished with fresh chopped parsley and a squeeze of lemon juice, if desired. Enjoy!
