Basic Breads Ep 10 - Pretzel Buns

Dough:
260g Lukewarm Water
7g Instant Yeast
1 x tbs sugar
400g Bread Flour
1 x tsp salt
Oil for greasing
Salt for sprinkling
1/2 egg white (I save the rest of the egg)
1 x tbs Honey & Bicarbonate of Soda for boiling
Directions
Mix water & yeast, add sugar and mix again. Add salt and flour and mix well until combined. Use your hand to combine then using a dough scraper or spatula fold the dough over itself 10 to 20 times on each side. (If you’re comfortable with kneading you can knead it for 5min)
Grease a clean bowl all over with some oil and the top of your cling film and place the dough in the clean bowl for 1 -1.5 hours to rise.
Once risen punch down your dough, take out and roughly shape into a circle and cut into 8 (no flour on surface it will be oily instead) shape each piece into a ball and place on little squares of parchment paper. Cover and rest for 30 min. Heat oven to 220C.
Boil water in a large pan, get egg white ready, a tea towel and a skated spoon. Add parchment paper to 2 trays. Once rolls are ready turn water to simmer add honey and soda and simmer for 45 seconds on each side, be gentle when flipping them over and taking them out you don’t want to dent them. Rest your spoon on the tea towel before adding to dish to get rid of excess water, brush with egg wash quickly, sprinkle with salt, cut them if you’re doing so and get them in the oven while they’re warm. Bake 4 on each tray and swap the trays over half way through. When the second lot are boiled just add them to the oven (you can bake both trays at the same time) bake for 20-22 min
