12 whole carrots
1 tbsp. olive oil
1 tsp. Salt
1 tsp. onion powder
1 tsp. smoked paprika
1/2 cup cottage cheese
1/2 cup light ricotta
1 tbsp. Honey
1/2 tsp. salt (to taste)
1/2 tbsp. hot honey (or regular)
1/3 cup crushed walnuts
Dried parsley for garnish
Directions
Preheat your oven to 400.
I roasted the entire carrot because I liked the way they looked on the plate but you can always cut in halves or quarters!
Coat in olive oil, onion powder, salt, and smoked paprika.
Place your carrots on a lined baking dish. Bake at 400 for 30 minutes (flipping halfway through).
While the carrots are roasting make your ricotta spread. Add the ricotta, cottage cheese, honey, and salt to a blender and blend until smooth.
Right before serving: spread an even layer of the ricotta dip on a plate. Place the roasted carrots on top. Finish with hot honey, walnuts, and parsley.
