This is not your average coleslaw recipe—this one’s got all the flavor of Mexican street corn, built like a slaw and perfect for tacos, BBQ, or straight out of the bowl.

Elote Style Slaw Recipe:

4 cups shredded green cabbage

2 cups shredded purple cabbage

4 grilled ears of corn, kernels removed

½ cup mayonnaise

¼ cup Mexican crema (or sour cream)

¼ cup fresh cilantro, chopped

¼ cup cotija cheese, crumbled

1 jalapeño, finely diced (optional)

1 tsp chili powder

1 tsp smoked paprika

heathrilesbbq Garlic Jalapeño Rub, to taste

Juice of 1 lime

Directions

Mix it all up and let it chill. Goes great with tacos, pulled pork, grilled chicken—you name it.
