San Francisco Garlic Noodles [Swithin]

1.5 tablespoons soy sauce
1 tablespoon oyster sauce
1.5 teaspoons Worcestershire sauce
1 teaspoon Asian fish sauce
1/4 teaspoon sesame oil
pinch of cayenne pepper
6 ounces dry egg noodles or Spaghetti
4 tablespoons unsalted butter
8 cloves finely minced garlic
1/4 cup finely grated Parmigiano-Reggiano
thinly sliced green onion to garnish
red chili flakes to taste
Directions
Melt butter in the pan on medium heat, once slightly bubbling, add the garlic and don’t toast. Just soften
Add the sauce(soy, oyster, worcestershire, fish, sesame oil and pinch of cayenne). Reserve and keep aside
Boil the noodles to instructions, Pull the noodles into the sauce and put some pasta water accordingly
Add the grated parm in the end and stir in

Sauce can be salty so add half to three quarters first and see whether you need more
