Lemon Garlic Soup

Ingredients

1 Tbsp olive oil

4 garlic cloves

1 red onion

0.5 tsp paprika

1 tsp dried rosemary

1 tsp dried thyme

0.5 tsp garlic powder

¼ tsp chili flakes

1.2 L (5 cups) cooked butter beans

1 L (4 cups) vegetable broth

salt & black pepper, to taste

Juice from 1 lemon + zest

Directions

1. Heat the olive oil in a pot over medium heat, add the onion saute for about 1 minute, add the garlic and sauté for another minute.

2. Add the spices, butter beans and broth.

3. Use an immersion blender and blend until smooth.

4. Let it simmer for 10 minutes, stirring occasionally.

5. Add lemon juice and zest.

6. Add more salt and pepper to taste. Enjoy!
