1 package thin, center cut pork chops with bone in (for added flavor)
salt
pepper
rubbed sage
1 onion, chopped
1 package fresh sliced mushrooms
1 can fat free, reduced sodium cream of mushroom soup
2 T olive oil or light butter (both work equally)
1 can fat-free, reduced sodium chicken broth
Handful chopped parsley (optional but nice!)
Directions
Trim off all visible fat from chops. Sprinkle salt, pepper, and a little sage on each side. Brown chops on each side then remove from pan. Add the other T oil or butter, onions, and mushrooms. Saute until tender.
Add mushroom soup and broth. Sprinkle with a little more salt, pepper and sage. Add chops again and simmer about 20 minutes until chops are fully cooked and very tender. Top with parsley and serve over steamed rice.
