Cheesy Spinach Stuffed Chicken Breasts

Ingredients

4 boneless, skinless chicken breasts

Salt & black pepper, to taste

1 tsp paprika

½ tsp garlic powder

1 tbsp olive oil

Filling:

1 cup fresh spinach, chopped (or frozen, well squeezed)

120 g cream cheese, softened

½ cup shredded mozzarella

¼ cup grated parmesan

2 cloves garlic, minced

Salt & pepper, to taste

Pinch of chili flakes (optional)

Directions

Prepare chicken:

Slice a deep pocket into each chicken breast (do not cut through). Season inside and out with salt, pepper, paprika, and garlic powder.

Make filling:

In a bowl, mix cream cheese, mozzarella, parmesan, spinach, garlic, salt, pepper, and chili flakes.

Stuff chicken:

Fill each chicken breast with the spinach-cheese mixture. Secure with toothpicks if needed.

Sear:

Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken 3–4 minutes per side until golden.

Bake:

Transfer skillet to oven and bake at 190°C (375°F) for 18–22 minutes, until chicken is cooked through (internal temp 74°C).

Rest & serve:

Let rest 5 minutes before serving. Remove toothpicks.
