Nothing beats an good Cacio e pepe! Quick, easy, way too tasty! This is how I make mine with only 4 ingredients.
500 gr spaghetti or tonnarelli
about 200 gr Pecorino romano
about 1-2 tbsp black peppercorns
olive oil
Directions
Freshly crack the peper or grind with a mortar and pestle. Toast in a dry pan on low heat for a few minutes
Cook the pasta in not too salty water until very al dente about 7 minutes
Grate the Pecorino as fine as possible and save for later
Add some olive oil and water to the peppercorns. After a few minutes add the pasta with pasta water. Mix really well so it becomes creamy.
Turn off the heat and add in almost all the Pecorino togheter with some more pasta water
