Chicken Satay with Peanut Sauce

Ingredients

-¼ c coconut milk

- 2 Tbsp soy sauce

- 2 ½ tsp yellow curry powder

- 1 ½ tsp turmeric

- 3 garlic cloves, minced

- 1 Tbsp ginger root, grated

- 1 Tbsp brown sugar

- 1 Tbsp fish sauce

2 lbs boneless, skinless chicken thighs (cut into 1” chunks)

1 Tbsp canola oil

Salt & pepper to taste

Peanut Sauce

3 Tbsp creamy peanut butter

1 Tbsp soy sauce

1 Tbsp lime juice

2 tsp brown sugar

2 tsp chili sauce

Directions

In a medium bowl, add all dashed ingredients.

Place this mixture in a Ziploc bag with chicken.

Marinade for at least 2 hrs or overnight.

Drain the chicken from the marinade. Pre-heat the grill to medium high and thread chicken onto skewers.

Brush with canola oil and grill.

Mix the peanut sauce ingredients together.

Serve over rice.
